The products in this line are made only from yellowfin tuna (Thunnus albacares), which is probably the most used and well-known fish in the canning world. The best parts of the pink and tasty meat from the yellowfin tuna are selected for the preparation of this product. The quality of the product is different due to its preparation: traditional and by hand.
It is the most coveted and scarce part of the Spanish white tuna. It is notable for its unmistakable juiciness, texture and flavour, due to the higher concentration of fat; tuna belly can almost melt in the mouth.
